I have been given multiple quotes:
1: 6.65kW - SunPower MAX 2 350W + Fronius Primo 5.0-1 Inverter $8,490
2: 6.5kW Sunpower P-19 325W + Fronius Symo 5.0-3-M - inv $7,390
3: 6.6kW Canadian Solar C3L 330W + Fronius Symo 5.0 -3-M $5,290
4: 6.6kW SunTech mono crystalline half cell + 5kW GoodWe inverter - $3,591 (based on 5KW system plus free panles)
5: 6.6kW Seraphim + Solis Inverter 5kW - $5,191

How do I evaluate which way to go as they are all extremely different

To begin with you might want to read the best solar panels and best solar inverters article.

The Sunpower Maxeon 2 panels and Fronius inverter are basically the best of the best, hence why the price is higher.
The last 2 options are using some of the cheaper low-end inverters and entry level panels.

My advice would be to get the best system you can afford and check that the installer/company has a good reputation.

I’d go for Fronious & Canadian Solar. Sunpower are better panels but not to the extent that they are worth such a big premium
